Brouwerij 3 Fonteinen is one of the most important names in the modern revival of traditional lambic and gueuze.

Its roots in Beersel can be traced back to at least 1864, when an inn was established on the site associated with the later 3 Fonteinen business. Gaston Debelder and his wife Raymonde took over the inn and gueuze blending house in 1953, and the business later passed to their sons.

Armand Debelder became the defining figure in its modern history. At a time when traditional gueuze was declining in popularity, he remained convinced that the style had a future. He began brewing lambic himself in 1998 and in 2001 established the brewery as a separate business focused on lambic and gueuze.

That commitment nearly ended in disaster in 2009, when a faulty thermostat caused temperatures in a storage room to rise dramatically. Around 13,000 bottles exploded and much of a year’s saleable stock was lost. The brewery survived with support from friends, fellow brewers and enthusiasts, and the period that followed forced 3 Fonteinen to combine its devotion to a slow traditional process with a more deliberate approach to long-term financial sustainability.

Yet 3 Fonteinen’s identity has never been quite as narrow as its reputation for lambic might suggest. After a beer trip to the Bamberg region in 2001, Armand became particularly enthusiastic about Franconian lager and later created Beersel Lager, brewed on the brewery’s behalf at De Proefbrouwerij. It is a small but revealing part of the story: one of Belgium’s great champions of traditional lambic was also curious about other brewing traditions and willing to explore them.

Today, 3 Fonteinen remains closely associated with traditional lambic and gueuze, but its history is also one of resilience, curiosity and adaptation. Its survival has depended not simply on preserving the past, but on finding ways to keep that past viable in the present.

The brewery is open only on Fridays and Saturdays from 2pm until 8:30pm, with last orders at 7:30pm, and on Sundays from 1pm until 7:30pm, with last orders at 6:30pm.

The bar is a long, sweeping room with plenty of seating and tables. Board games are available, and there are various displays of brewery artefacts to look through while you drink.

The adjacent shop is simple and functional, with shelves of the beers currently available, along with glasses and clothing. Depending on the time of year, it may also sell the brewery’s own vinegar, made from lambic, and honey.
